Tortilla soup: extra tips
In a previous post, we shared this delicious tortilla soup recipe. However, as we mentioned before, there are different variations depending on tastes and preferences. Mexico has a long tradition of broths and soups, but this one is a favorite for its flavor and versatility.
This soup is said to originate from the state of Tlaxcala, the smallest state located in eastern Mexico. Day-old tortillas are generally used, as they have lost some of their flexibility. This way, food waste is avoided.
Below, we share some valuable tips that can make tortilla soup one of your “comfort foods.”
Tortillas
Why strips instead of tortilla chips? Cutting the tortillas this way achieves a crunchy texture in every bite. Plus, it’s easier and faster to fry or bake.
Extra tip: After cutting the tortillas, let them dry in the sun for a day on a large tray. This helps eliminate moisture and makes the tortilla crispier.
The Broth
There are various ways to make a base with chicken broth; you can add carrots, celery, onion, bay leaves, or thyme. In Mexico, a generous amount of onion, garlic, and cilantro is traditionally added, and this gives it a very distinctive flavor.
Extra tip: Utilize different parts of the chicken to use later in another preparation. Bones like the huacal and wings will add a lot of flavor.
The Chili Peppers
As mentioned in the recipe, you can use a wide variety of dried chili peppers such as mulato, ancho, guajillo, or pasilla. This will add a delicious touch of flavor.
Extra tip: Always remove the veins and seeds from the chili peppers before toasting or browning. This will prevent the activation of capsaicin (the compound that gives the spicy sensation). Otherwise, you won’t be able to stop coughing when you cook the chiles.
A Little Flavor
One of the variations of this soup in some states is to add a little epazote. This will give it a very special touch.
Extra tip: Add the epazote once you’ve put the ground ingredients in the pot. Remove from the pot after it has boiled for 10 minutes, otherwise the flavor will be too strong.
Everything in Its Place
Place the toppings in separate containers in the center of the table, so each person can serve themselves. If there are any leftovers, you can store them in the refrigerator in covered containers. The exception is the tortilla, which should be stored at room temperature in a covered container. It can last up to 2 weeks!
